- 1/4 teaspoon baking soda

For the chutney:

- 1/2 inch piece of ginger
- 2 cloves of garlic
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- 1/4 teaspoon fennel seeds
- 1/2 teaspoon salt
- 1/2 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 1 tablespoon oil
Instructions:
- Soak the urad dal in enough water to cover it for at least 4 hours. Drain the water and grind the dal to a fine paste. Add a little water if needed to help the grinding process.
- In a small pan, dry roast the cumin, coriander, and fennel seeds until fragrant. Grind them to a fine powder using a spice grinder or mortar and pestle.
- In a large bowl, mix the ground urad dal, spice powder, salt, red chili powder, garam masala, and baking soda. Mix well until everything is combined.
- Heat oil in a deep frying pan over medium heat. Once the oil is hot, drop small balls of the urad dal mixture into the oil. Fry until golden brown, turning occasionally to ensure even cooking. Drain on a paper towel-lined plate.
- To make the chutney, roughly chop the tomatoes, ginger, and garlic. Grind them to a fine paste in a blender or food processor.
- In a small pan, heat oil over medium heat. Add the cumin, coriander, and fennel seeds and fry for a few seconds until fragrant.
- Add the tomato paste to the pan and stir well. Add salt, red chili powder, and garam masala, and cook for 5-7 minutes until the chutney has thickened.
- Serve the fritters hot with the chutney on the side.
