Ingredients
- 6-7 medium-sized tomatoes
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1/2 tsp fenugreek seeds
- 1/2 tsp fennel seeds
- 1/2 tsp nigella seeds
- 2-3 dried red chillies
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp garam masala powder
- 1 tsp salt (or to taste)
- 1/2 cup sugar
- 1/4 cup vinegar
- 3-4 tbsp oil
Instructions:
- Wash the tomatoes and chop them into small pieces.
- Heat oil in a pan over medium heat. Once the oil is hot, add cumin seeds, mustard seeds, fenugreek seeds, fennel seeds, and nigella seeds. Fry the spices for a few seconds until they start to crackle.
- Add dried red chillies to the pan and fry for a few seconds.
- Add chopped tomatoes to the pan and mix well.
- Add turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder, and salt to the pan. Mix well and cook for 5-7 minutes until the tomatoes are soft and mushy.
- Add sugar to the pan and mix well. Cook for another 5-7 minutes until the sugar has dissolved and the mixture starts to thicken.
- Add vinegar to the pan and mix well. Cook for another 2-3 minutes until the mixture thickens further and becomes shiny.
- Turn off the heat and let the mixture cool down.
- Once the mixture has cooled down, transfer it to a clean, dry jar and store it in the refrigerator.
- Your Tamatar Ki Launji is now ready to be served! It can be stored in the refrigerator for up to a week.
Tips
- Adjust the amount of sugar and vinegar to suit your taste.
- You can add more or less red chilli powder depending on how spicy you want the launji to be.
