Ingredients

  • 6-7 medium-sized tomatoes
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp nigella seeds
  • 2-3 dried red chillies
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp garam masala powder
  • 1 tsp salt (or to taste)
  • 1/2 cup sugar
  • 1/4 cup vinegar
  • 3-4 tbsp oil

Instructions:

  • Wash the tomatoes and chop them into small pieces.
  • Heat oil in a pan over medium heat. Once the oil is hot, add cumin seeds, mustard seeds, fenugreek seeds, fennel seeds, and nigella seeds. Fry the spices for a few seconds until they start to crackle.
  • Add dried red chillies to the pan and fry for a few seconds.
  • Add chopped tomatoes to the pan and mix well.
  • Add turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder, and salt to the pan. Mix well and cook for 5-7 minutes until the tomatoes are soft and mushy.
  • Add sugar to the pan and mix well. Cook for another 5-7 minutes until the sugar has dissolved and the mixture starts to thicken.
  • Add vinegar to the pan and mix well. Cook for another 2-3 minutes until the mixture thickens further and becomes shiny.
  • Turn off the heat and let the mixture cool down.
  • Once the mixture has cooled down, transfer it to a clean, dry jar and store it in the refrigerator.
  • Your Tamatar Ki Launji is now ready to be served! It can be stored in the refrigerator for up to a week.

Tips

  • Adjust the amount of sugar and vinegar to suit your taste.
  • You can add more or less red chilli powder depending on how spicy you want the launji to be.
  • Make sure to use a clean and dry jar to store the launji.
  • You can also add chopped ginger and garlic to the launji for extra flavor.
