- In a large pot, combine the soaked chana dal, sunchoke, and enough water to cover the ingredients. Bring the mixture to a boil and then reduce the heat to medium-low. Cover the pot and let the mixture cook until the chana dal and sunchoke are tender, about 20-25 minutes.
- Once the chana dal and sunchoke are cooked, drain any excess water and transfer the mixture to a large mixing bowl. Mash the chana dal and sunchoke together with a potato masher or the back of a spoon until they form a smooth paste.
- Add the ginger paste, garlic paste, chopped green chilies, red chili powder, coriander powder, cumin powder, garam masala, and salt to the mixing bowl with the mashed chana dal and sunchoke. Mix all the ingredients well until they are fully combined.
