Stuffed ravioli is a delicious and comforting Italian dish that’s perfect for any occasion. While the process of making homemade ravioli can seem intimidating, it’s actually quite simple and fun. Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup water
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  • In a large bowl, mix together the flour and salt. Create a well in the center of the flour mixture and add the eggs and olive oil. Use a fork to whisk the eggs and oil together, gradually incorporating the flour mixture until a dough forms. If the dough seems dry, add water one tablespoon at a time until it comes together.
  • Turn the dough out onto a floured surface and knead for about 10 minutes, or until the dough is smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  • While the dough is resting, prepare the filling. In a medium bowl, mix together the ricotta cheese, parmesan cheese, basil, parsley, garlic, salt, and pepper.
  • After the dough has rested, divide it into four equal portions. Working with one portion at a time, roll the dough out into a thin sheet using a rolling pin or a pasta machine. The sheets should be thin enough to see through but thick enough to hold the filling without tearing.
  • Spoon small mounds of the filling onto the dough, leaving about 1 inch of space between each mound. Brush the spaces in between the filling with water to help the dough stick together.
  • Place another sheet of dough on top of the filling and gently press around each mound of filling to seal the two sheets together. Use a knife or a ravioli cutter to cut out each individual ravioli.
  • Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes, or until they float to the surface of the water. Drain the ravioli and serve with your favorite sauce.

  • Make sure to seal the ravioli tightly to prevent them from bursting open during cooking.
