Ingredients
- 1 cup Gram flour (Besan)
- 2 cups of Water
- 2 cups of Buttermilk
- 1 cup Mixed Vegetables (chopped, potatoes, carrots, drumsticks, etc.)
- 1 Onion (sliced)
- 2 Green Chillies (chopped)
- 1 tbsp Ginger-garlic paste
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1/4 tsp Fenugreek seeds (methi)
- 1/4 tsp Turmeric powder
- 1/2 tsp Red Chilli Powder
- 1 tsp Coriander powder
- 1 tsp Cumin powder
- 1 tsp Sugar
- 2 tbsp Oil
- Salt to taste
For tempering:
- 1 tbsp Oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1/4 tsp Fenugreek seeds (methi)
- 2 Dry Red Chillies
- 1/4 tsp Asafoetida (hing)
Method:
- In a bowl, mix the gram flour and water together to make a smooth batter. Set aside.
- In a pan, heat oil and add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.
- Add sliced onions and chopped green chillies. Fry until the onions turn golden brown.
- Add ginger-garlic paste and fry for another minute.
- Add the mixed vegetables and fry for 2-3 minutes on medium heat.
- Add turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Mix well.
- Add the buttermilk and 2 cups of water. Mix well.
- Add the gram flour batter and mix well.
- Add sugar and let the kadhi come to a boil on medium heat.
- Reduce the heat and let the kadhi simmer for 20-25 minutes, stirring occasionally.
- Check the consistency of the kadhi, and if it is too thick, add some more water.
- In a separate pan, heat oil and add mustard seeds, cumin seeds, fenugreek seeds, dry red chillies, and asafoetida. Let them splutter.
- Pour the tempering over the kadhi and mix well.
- Serve hot with steamed rice.
