Ingredients
For the Rajasthani Kadhi:
- 2 cups plain yogurt
- 1/2 cup gram flour (besan)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1 tsp salt
- 2 cups water
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2-3 dried red chilies
- 10-12 curry leaves
- 1 inch ginger, grated
- 2 garlic cloves, minced
- 1 onion, finely chopped
- 2 tbsp coriander leaves, chopped
For the Tofu Palak Pakoda:
- 1 block firm tofu, drained and crumbled
- 1 cup spinach leaves, chopped
- 1/2 cup gram flour (besan)
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/2 tsp red chili powder
- 1 tsp salt
- 1/4 cup water
- Oil for frying
Instructions:
- To make the kadhi, whisk together the yogurt, gram flour, cumin seeds, turmeric powder, red chili powder, coriander powder, garam masala, and salt in a bowl. Add the water and whisk until smooth.
- Heat the oil in a pan and add the mustard seeds, cumin seeds, dried red chilies, and curry leaves. Fry until the seeds start to crackle.
- Add the grated ginger, minced garlic, and chopped onion. Saute until the onion is translucent.
- Pour in the yogurt mixture and bring it to a boil, stirring constantly.
- Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the kadhi thickens.
- Garnish with chopped coriander leaves and keep aside.
- To make the tofu palak pakoda, mix together the crumbled tofu, chopped spinach leaves, gram flour, cumin seeds, coriander powder, red chili powder, salt, and water in a bowl. Mix well to form a thick batter.
- Heat oil in a deep frying pan. Once the oil is hot, drop spoonfuls of the batter into the hot oil and fry until golden brown.
- Drain the pakodas on a paper towel to remove any excess oil.
- Serve the Rajasthani kadhi hot with the tofu palak pakoda on the side.
