How To make Paal Poli? | Instant Paal Poli Recipe

Paal Poli is a traditional South Indian sweet delicacy that is often made during festivals and special occasions. It is a simple yet indulgent dessert that combines the softness of poli (a type of Indian flatbread) with the creaminess of sweetened milk. The dish has a rich and luscious texture, with a hint of cardamom and saffron for flavor.

Ingredients

For the poli dough: 

  • 1 cup of maida (all-purpose flour) 
  • 1/4 ts 2 tbsp of oil 
  • Water as required 

For the filling: 

  • 1 cup of grated coconut 
  • 1/2 cup of jaggery 
  • 1/2 tsp of cardamom powder 

For the milk: 

  • 1 liter of full-fat milk 
  • 1/2 cup of sugar 
  • A pinch of saffron

Instructions:

  • To make the poli dough, mix the maida, salt, and oil in a bowl. Add water gradually and knead the dough until it becomes soft and smooth. Cover it with a damp cloth and let it rest for 30 minutes. 
  • For the filling, heat a pan on medium flame and add the grated coconut. Roast it until it turns light brown and releases a nutty aroma. Then, add the jaggery and cardamom powder and mix well. Cook for a few more minutes until the jaggery melts and the mixture becomes sticky. Turn off the heat and let it cool. 
  • Divide the poli dough into small balls and flatten them into circles. Place a spoonful of the coconut filling in the center of each circle and wrap the dough around it, sealing the edges. Flatten the filled dough balls into small discs. 
  • Heat a non-stick pan on medium heat and place the filled discs on it. Cook them on both sides until they turn golden brown and crisp. Remove from heat and keep aside. 
  • In another pan, heat the milk on medium flame and bring it to a boil. Add the sugar and saffron and stir until the sugar dissolves. Let the milk simmer for 10-15 minutes until it thickens and reduces in volume. 
  • Add the cooked poli discs to the milk and let them soak for 10-15 minutes. Turn off the heat and let the dish cool. 
  • Serve the Paal Poli garnished with chopped nuts, saffron strands, and a drizzle of honey or syrup.

Tips

  • You can also use wheat flour or a combination of wheat and maida to make the poli dough. 
  • Adjust the amount of jaggery and sugar according to your preference. 
  • Make sure the milk doesn’t boil over while simmering. Keep stirring occasionally to prevent it from sticking to the bottom of the pan.
