Ingredients
- Lamb shanks – 4
- Onion – 2 medium-sized, finely chopped
- Tomato – 2 medium-sized, finely chopped
- Ginger-garlic paste – 1 tablespoon
- Green chillies – 3-4, slit lengthwise
- Curry leaves – a few
- Red chilli powder – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Coriander powder – 1 tablespoon
- Cumin powder – 1 teaspoon
- Garam masala powder – 1 teaspoon
- Tamarind pulp – 1 tablespoon
- Salt – as per taste
- Oil – 4 tablespoons
- Water – 2 cups
- Fresh coriander leaves – a handful, finely chopped
- Lemon juice – 1 tablespoon
Method:
- First, wash the lamb shanks thoroughly and drain the excess water. Pat them dry with a paper towel and keep them aside.
- Heat 2 tablespoons of oil in a heavy-bottomed pan and add the lamb shanks to it. Fry them on medium heat for 5-6 minutes until they are browned on all sides. Remove them from the pan and keep them aside.
- In the same pan, add the remaining 2 tablespoons of oil and sauté the chopped onions until they turn golden brown. Add the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Now, add the chopped tomatoes, slit green chillies, and curry leaves to the pan. Stir well and cook for 5-6 minutes until the tomatoes are soft and mushy.
- Add the red chilli powder, turmeric powder, coriander powder, cumin powder, and garam masala powder to the pan. Mix well and cook for 1-2 minutes until the spices are fragrant.
- Add the tamarind pulp and 2 cups of water to the pan. Stir well and bring the mixture to a boil.
- Add the lamb shanks to the pan and mix well. Cover the pan with a lid and cook on low heat for 30-40 minutes until the lamb shanks are tender and cooked through.
- Check the seasoning and add salt as per taste. If the gravy is too thick, add some more water to it.
- Garnish the Nalli Ka Salan with fresh coriander leaves and lemon juice. Serve hot with steamed rice or Indian breads.

- You can also use mutton or beef instead of lamb shanks to make this dish.
