How To make Multi-layered Ghevar? | Instant Multi-layered Ghevar Recipe
Ghevar is a popular Rajasthani dessert that is usually made during festive occasions such as Teej, Raksha Bandhan, and Diwali. It is a disc-shaped sweet that is made with a batter of flour, milk, and ghee, and is deep-fried in oil. The dish is usually topped with sugar syrup, rabri, and dry fruits.
Here is the list of step to make Multi-layered Ghevar at homeĀ
Ingredients:
- 1 cup all-purpose flour (maida)
- 1/2 cup ghee
- 1/2 cup milk
- 1/2 cup chilled water
- A pinch of saffron (kesar) strands
- 1/4 tsp cardamom (elaichi) powder
- Oil or ghee for deep frying
- Silver foil (optional)
- Sugar syrup
- Rabri
- Dry fruits (chopped)
Instructions:
- Take a large mixing bowl and add all-purpose flour, ghee, and milk to it. Mix all the ingredients well using a whisk or a hand mixer until the batter becomes smooth and creamy.
- Add chilled water to the batter and whisk it again. The batter should be thin in consistency, so make sure to add water gradually and mix well until you get the desired consistency.
- Soak a few saffron strands in warm milk and add it to the batter along with cardamom powder. Mix well.
- Heat oil or ghee in a deep frying pan. When the oil is hot enough, take a perforated ghevar mold and pour a ladleful of batter into it. Slowly dip the mold into the hot oil and let the batter cook until it turns golden brown in color.
- Once the ghevar is cooked, take it out of the oil using a skewer or a fork and place it on a plate. Let it cool down.
- Repeat the process with the remaining batter, making sure to clean the ghevar mold after every use.
- Once all the ghevars are cooked and cooled, stack them on top of each other to form a multi-layered ghevar.
- Pour sugar syrup on top of the ghevar, making sure that it seeps through all the layers. Let it rest for a few minutes.
- Pour rabri on top of the ghevar and spread it evenly using a spoon.
- Garnish with chopped dry fruits and silver foil, if using.
- Your multi-layered ghevar is now ready to be served!
