Step 1: Prepare the dough
- In a large mixing bowl, combine the all-purpose flour, vegetable oil, and salt.
- Mix everything together until the mixture becomes crumbly.
- Slowly add water, a little at a time, and knead the dough until it becomes smooth and pliable.
- Cover the dough with a damp cloth and let it rest for at least 20 minutes.
Step 2: Prepare the filling
- In a pan, heat 1 tbsp vegetable oil over medium heat.
- Add the cumin seeds and coriander seeds and fry until they start to crackle.
- Add the frozen green peas and cook for 2-3 minutes.

- Cut the disc in half to make two semi-circles.
- Take one semi-circle and form a cone by bringing the straight edges together and sealing the edges with a little water.
- Fill the cone with the prepared pea filling, leaving some space at the top.
- Seal the top of the cone with a little water.
- Repeat the process with the remaining dough and filling.
Step 4: Fry the samosas
- Heat enough vegetable oil in a deep frying pan.
- Once the oil is hot, add a few samosas at a time and fry on medium heat until they turn golden brown.
- Remove the samosas from the oil and place them on a paper towel to absorb the excess oil.
