Kuska Biryani is a popular South Indian dish that is a simple version of biryani. It is a fragrant and flavorful rice dish made with aromatic spices and basmati rice, and is perfect for a quick and easy meal. Here is a simple recipe to make Kuska Biryani at home.

Here is a breakfast recipe that is easy to prepare and delicious to eat.

Ingredients

  • 2 cups basmati rice
  • 2 onions, thinly sliced
  • 1 tomato, chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon black pepper powder
  • 3-4 cloves
  • 3-4 cardamom pods
  • 1 cinnamon stick
  • 2 bay leaves
  • 2 tablespoons ghee
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  • Rinse the rice in water a few times and soak it in enough water for 30 minutes. Drain the water and set aside.
  • Heat a pan or a pressure cooker and add ghee. Once the ghee melts, add the whole spices – cumin seeds, fennel seeds, cloves, cardamom pods, cinnamon stick, and bay leaves. Saute for a few seconds until the spices release their aroma.
  • Add the sliced onions and saute until they turn golden brown. Then add the ginger-garlic paste and saute for a minute until the raw smell goes away.
  • Add the chopped tomato and green chilies and saute until the tomato turns mushy.
  • Add the coriander powder, garam masala, turmeric powder, red chili powder, black pepper powder, and salt. Mix well and saute for a minute.
  • Add the soaked rice and saute for a minute until the rice is well coated with the masala.
  • Add 3 cups of water for every 2 cups of rice, and mix well. Check for salt and adjust accordingly.
  • If using a pan, cover it with a lid and cook on low heat until the rice is cooked and all the water has been absorbed. If using a pressure cooker, close the lid and cook for 2 whistles on high heat, then reduce the heat to low and cook for another 5 minutes. Turn off the heat and let the pressure release naturally.
  • Once the rice is cooked, fluff it up with a fork and garnish with chopped coriander leaves. Serve hot with raita or any side dish of your choice.

Tips

  • You can add vegetables like carrots, beans, peas, or potatoes to make it a vegetable kuska biryani.
  • You can also add some fried cashews and raisins for extra flavor and texture.
  • Adjust the spices according to your taste preferences. You can also add more green chilies or red chili powder for a spicier biryani.
  • Use good quality basmati rice for best results.
