Ingredients
- 2 cups basmati rice
- 2 onions, thinly sliced
- 1 tomato, chopped
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon black pepper powder
- 3-4 cloves
- 3-4 cardamom pods
- 1 cinnamon stick
- 2 bay leaves
- 2 tablespoons ghee
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Rinse the rice in water a few times and soak it in enough water for 30 minutes. Drain the water and set aside.
- Heat a pan or a pressure cooker and add ghee. Once the ghee melts, add the whole spices – cumin seeds, fennel seeds, cloves, cardamom pods, cinnamon stick, and bay leaves. Saute for a few seconds until the spices release their aroma.
- Add the sliced onions and saute until they turn golden brown. Then add the ginger-garlic paste and saute for a minute until the raw smell goes away.
- Add the chopped tomato and green chilies and saute until the tomato turns mushy.
- Add the coriander powder, garam masala, turmeric powder, red chili powder, black pepper powder, and salt. Mix well and saute for a minute.
- Add the soaked rice and saute for a minute until the rice is well coated with the masala.
- Add 3 cups of water for every 2 cups of rice, and mix well. Check for salt and adjust accordingly.
- If using a pan, cover it with a lid and cook on low heat until the rice is cooked and all the water has been absorbed. If using a pressure cooker, close the lid and cook for 2 whistles on high heat, then reduce the heat to low and cook for another 5 minutes. Turn off the heat and let the pressure release naturally.
- Once the rice is cooked, fluff it up with a fork and garnish with chopped coriander leaves. Serve hot with raita or any side dish of your choice.
