How To make Kesar Pista Phirni? | Instant Kesar Pista Phirni Recipe
Kesar Pista Phirni is a delicious and creamy Indian dessert made with rice, milk, sugar, and flavored with saffron (kesar) and pistachios (pista). It’s a popular dessert in North India and is often made during festivals and special occasions. In this recipe, we will be using basmati rice, but you can also use any other variety of rice.
Here is a breakfast recipe that is easy to prepare and delicious to eat.
Ingredients
- 1/4 cup basmati rice
- 1 liter full-fat milk
- 1/2 cup sugar
- A pinch of saffron (kesar)
- 1/4 cup pistachios (pista), finely chopped
- 1 teaspoon cardamom powder (elaichi)
Instructions:
- Wash the basmati rice thoroughly and soak it in water for 30 minutes.
- After 30 minutes, drain the water and grind the rice into a fine paste. You can add a little water to help with the grinding process.
- In a heavy-bottomed pan, heat the milk and bring it to a boil. Keep stirring to prevent the milk from sticking to the bottom of the pan.
- Once the milk comes to a boil, reduce the heat to low and let it simmer for 10-15 minutes. Keep stirring frequently.
- Add the rice paste to the milk and stir well. Cook for another 10-15 minutes, stirring frequently.
- Add sugar to the milk-rice mixture and stir well. Cook for another 10-15 minutes, stirringfrequently.
- Meanwhile, soak a pinch of saffron in 1 tablespoon of warm milk for 10 minutes.
- Add the saffron milk, chopped pistachios, and cardamom powder to the phirni mixture and stir well.
- Cook for another 5-10 minutes or until the mixture thickens and reaches a custard-like consistency. The phirni should coat the back of the spoon.
- Turn off the heat and let the phirni cool down to room temperature.
- Once the phirni has cooled down, pour it into individual serving bowls and garnish with chopped pistachios.
- Refrigerate the phirni for at least 2-3 hours before serving.
