How To make Keerai Molagootal? | Instant Keerai Molagootal Recipe

Ingredients
- 1 bunch of spinach or any other leafy greens like amaranth, kale or collard greens
- 1/2 cup of moong dal (split green gram)
- 1/2 tsp of turmeric powder
- 1 tsp of salt or as required
- 2 tbsp of coconut oil
- 1 tsp of mustard seeds
- 1 tsp of cumin seeds
- 1/4 tsp of asafoetida
- 2-3 dried red chillies
- 1/4 cup of grated coconut
Instructions:
- First, rinse the spinach leaves and chop them roughly. Keep aside.
- Wash the moong dal and pressure cook it along with turmeric powder and 2 cups of water until it becomes soft and mushy. Keep aside.
- Heat 1 tbsp of coconut oil in a pan and add the chopped spinach. Cook it for 2-3 minutes until it wilts down. Keep aside.
- Grind the grated coconut into a fine paste and keep aside.
- In the same pan, heat another tablespoon of coconut oil and add mustard seeds. Once it starts to crackle, add cumin seeds, asafoetida and dried red chillies. Fry for a few seconds until the spices release their aroma.
- Now add the cooked moong dal to the pan and mix well.
- Add the cooked spinach to the pan and mix well. Let it cook for 5-7 minutes until the flavors are well blended.
- Add salt as required and mix well.
- Now add the ground coconut paste to the pan and mix well.
- Let it cook for another 2-3 minutes until the gravy thickens and reaches the desired consistency.
- Turn off the heat and serve hot with rice or roti.
