How To make Keerai Molagootal? | Instant Keerai Molagootal Recipe

Ingredients

  • 1 bunch of spinach or any other leafy greens like amaranth, kale or collard greens
  • 1/2 cup of moong dal (split green gram)
  • 1/2 tsp of turmeric powder
  • 1 tsp of salt or as required
  • 2 tbsp of coconut oil
  • 1 tsp of mustard seeds
  • 1 tsp of cumin seeds
  • 1/4 tsp of asafoetida
  • 2-3 dried red chillies
  • 1/4 cup of grated coconut

Instructions:

  • First, rinse the spinach leaves and chop them roughly. Keep aside.
  • Wash the moong dal and pressure cook it along with turmeric powder and 2 cups of water until it becomes soft and mushy. Keep aside.
  • Heat 1 tbsp of coconut oil in a pan and add the chopped spinach. Cook it for 2-3 minutes until it wilts down. Keep aside.
  • Grind the grated coconut into a fine paste and keep aside.
  • In the same pan, heat another tablespoon of coconut oil and add mustard seeds. Once it starts to crackle, add cumin seeds, asafoetida and dried red chillies. Fry for a few seconds until the spices release their aroma.
  • Now add the cooked moong dal to the pan and mix well.
  • Add the cooked spinach to the pan and mix well. Let it cook for 5-7 minutes until the flavors are well blended.
  • Add salt as required and mix well.
  • Now add the ground coconut paste to the pan and mix well.
  • Let it cook for another 2-3 minutes until the gravy thickens and reaches the desired consistency.
  • Turn off the heat and serve hot with rice or roti.
