Ghee Roast Chicken Dosa Quesadilla Recipe
Here is a breakfast recipe that is easy to prepare and delicious to eat.
Ingredients
- 2 cups dosa batter
- 1 cup cooked chicken, shredded
- 1 tbsp ghee
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp black peppercorns
- 1/2 tsp fennel seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp salt
- 1/2 cup chopped onion
- 1/2 cup chopped tomato
- 1/4 cup chopped cilantro
- 4 large flour tortillas
- 2 cups shredded cheese (Cheddar or Monterey Jack)
- Oil, for cooking
Ingredients:
- In a dry pan, toast the cumin seeds, coriander seeds, black peppercorns, and fennel seeds until fragrant. Let them cool, and then grind them into a fine powder in a spice grinder.
- In a large mixing bowl, mix together the dosa batter, shredded chicken, ghee, ground spice mixture, turmeric powder, red chili powder, and salt. Stir well to combine.
- Heat a non-stick pan over medium-high heat. Add a small amount of oil and spread it around with a spatula.
- Pour a ladleful of the dosa batter mixture onto the pan and spread it out into a thin, even circle. Cook until the bottom is golden brown, then flip and cook the other side until golden brown as well. Repeat until all the batter is used up.
- Preheat the oven to 350°F.
- Take a flour tortilla and place it on a baking sheet. Sprinkle some shredded cheese over the tortilla, then top it with a dosa. Add more cheese on top of the dosa, followed by some chopped onions, tomatoes, and cilantro. Finally, add another tortilla on top.
- Repeat this process until you have four quesadillas.
- Place the baking sheet in the oven and bake for 5-7 minutes, or until the cheese is melted and the tortillas are crispy.
- Remove the baking sheet from the oven and let the quesadillas cool for a few minutes before slicing them into wedges.
- Serve hot with your favorite salsa or chutney.
