Ingredients
For the Dough:
- 2 cups wheat flour
- 1 tsp salt
- 1 tsp oil
- Water, as needed
For the Filling:
- 1 cup moong dal (yellow lentils)
- 1 onion, chopped
- 1 tsp ginger, grated
- 1 tsp garlic, minced
- 1 green chili, finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1/2 tsp garam masala powder
- 1/2 tsp turmeric powder
- Salt, to taste
- 1 tbsp oil
For Cooking:
- Ghee, as needed
- Wheat flour, for dusting
Instructions:
- To make the dough, in a mixing bowl, add wheat flour, salt, oil and mix well.
- Gradually add water and knead to form a soft dough. Cover the dough and let it rest for 10-15 minutes.
- To make the filling, rinse the moong dal thoroughly and soak it in water for 30 minutes.
- After 30 minutes, drain the water and transfer the dal to a pressure cooker. Add 2 cups of water and salt, and pressure cook for 2-3 whistles or until the dal is cooked well.
- Once the pressure is released, open the cooker and mash the dal well.
- Heat oil in a pan, add cumin seeds and let it splutter.
- Add chopped onions and sauté till they turn translucent.
- Add ginger, garlic, and green chili and sauté for a minute.
- Add coriander powder, red chili powder, turmeric powder, garam masala powder and mix well.
- Add the mashed dal to the pan and mix well. Cook the dal mixture for 5-7 minutes or until it becomes dry.
- Take the dough and divide it into equal-sized balls.
- Dust the ball with wheat flour and roll it into a small circle.
- Place a tablespoon of the dal mixture in the center of the circle.
- Bring the edges of the dough together to cover the dal mixture and seal it properly.
- Dust the stuffed ball with wheat flour and roll it gently into a flat disc.
- Heat a tawa or griddle on medium heat.
- Place the rolled parantha on the tawa and cook until small bubbles appear on the surface.
- Apply ghee on top of the parantha and flip it over. Cook until both sides are golden brown.
- Repeat the same process for the remaining dough and dal mixture.
- Serve the hot and crispy dal parantha with yogurt, pickle, or chutney of your choice.
