Ingredients
- 2 cups of full-fat milk
- 1/4 cup of basmati rice
- 2 ripe custard apples
- 1/2 cup of sugar (adjust to taste)
- 1/4 teaspoon of cardamom powder
- 10-12 strands of saffron
- 2 tablespoons of chopped nuts (almonds, cashews, pistachios)
- 1 tablespoon of raisins
- A pinch of salt
Instructions:
- Wash the basmati rice under running water until the water runs clear. Soak the rice in water for about 30 minutes.
- In the meantime, remove the seeds and pulp from the custard apples. Place the pulp in a blender or food processor and blend until smooth. Set aside.
- Heat a heavy-bottomed pan on medium heat and add the milk. Bring the milk to a gentle boil, stirring occasionally to prevent it from sticking to the bottom of the pan.
- Once the milk starts boiling, drain the soaked rice and add it to the pan. Reduce the heat to low and simmer the rice in milk until it becomes soft and cooked. Stir occasionally to avoid lumps.
- While the rice is cooking, crush the saffron strands between your fingers and soak them in 1 tablespoon of warm milk. This will release the beautiful golden color and aroma of saffron.
- Once the rice is cooked and the milk has thickened, add the custard apple pulp to the pan. Mix well and simmer for another 5 minutes, allowing the flavors to blend together.
- Add sugar to the kheer and stir until it dissolves completely. Taste the kheer and adjust the sweetness according to your preference.
- Now, add the cardamom powder and saffron-infused milk to the pan. Mix well to incorporate the flavors.
- In a small frying pan, heat a teaspoon of ghee or clarified butter. Add the chopped nuts and raisins and sauté until the nuts turn golden brown and the raisins plump up. Remove from heat.
- Pour the roasted nuts and raisins along with the ghee into the kheer. Give it a gentle stir.
- Finally, add a pinch of salt to balance the flavors and give the kheer a unique taste. Stir well.
- Remove the kheer from heat and let it cool to room temperature. As it cools, it will thicken further.
- Once the kheer has cooled down, transfer it to a serving bowl or individual dessert bowls. Garnish with some more chopped nuts and saffron strands for an appealing presentation.
