Gujiya is a popular Indian sweet delicacy often enjoyed during festivals like Holi and Diwali. It is a sweet dumpling made with a crispy outer shell and a delicious filling. While traditional Gujiya is usually filled with khoya (reduced milk) and nuts, we will be making a variation using coconut. The coconut filling adds a unique flavor and texture to the Gujiya. Here’s a step-by-step recipe to make Coconut Gujiya:

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 2 tablespoons ghee (clarified butter)
  • Water, as needed

For the Filling:

  • 2 cups grated coconut
  • 1 cup powdered jaggery (or sugar)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped almonds and cashews
  • 2 tablespoons raisins

For Frying:

  • Vegetable oil, for deep frying

For Garnish:

  • Powdered sugar
  • Chopped pistachios or almonds

Instructions:

Prepare the Dough:

  • In a large mixing bowl, add the all-purpose flour and ghee. Mix well until the ghee is evenly incorporated into the flour.
  • Slowly add water little by little and knead to form a smooth and firm dough. Cover it with a damp cloth and set it aside for 30 minutes.

Prepare the Filling:

  • Heat a non-stick pan on medium heat and add the grated coconut. Sauté it for a few minutes until it turns slightly golden and releases a pleasant aroma.
  • Add the powdered jaggery (or sugar) to the pan and mix well. Continue cooking until the jaggery melts and combines with the coconut.
  • Add the cardamom powder, chopped almonds, cashews, and raisins. Stir everything together and cook for another 2-3 minutes. Remove from heat and let the filling cool completely.

Shape and Fill the Gujiya:

  • Divide the dough into small lemon-sized balls. Roll out each ball into a small circular disc with a diameter of approximately 3-4 inches.
  • Take one disc and place a spoonful of the coconut filling in the center. Fold the disc in half to form a semi-circle. Press the edges firmly to seal the Gujiya. You can use a little water to help seal the edges.
  • Now, starting from one end of the semi-circle, twist the edges to create a pattern. Repeat this process for the remaining dough balls and filling.

Fry the Gujiya:

  • Heat vegetable oil in a deep pan or kadai on medium heat. Once the oil is hot, carefully slide a few Gujiyas into the oil and fry them until golden brown and crispy. Make sure to maintain a medium heat to ensure even cooking.
  • Once done, remove the Gujiyas from the oil using a slotted spoon and place them on a paper towel-lined plate to remove excess oil. Repeat the frying process for the remaining Gujiyas.

Garnish and Serve:

  • Allow the fried Gujiyas to cool down completely. Once cooled, dust them with powdered sugar and sprinkle chopped pistachios or almonds on top for garnish.
