- 1 cup all-purpose flour (maida)
- 2 tablespoons semolina (suji)
- 2 tablespoons ghee
- A pinch of salt
- Water as needed
- 1/2 cup chopped prunes
- 1/2 cup chopped chocolate (you can use any type you like, but dark chocolate works well)
- 1/2 teaspoon cardamom powder
- Oil for deep frying
Instructions:
- In a mixing bowl, add 1 cup of all-purpose flour (maida), 2 tablespoons of semolina (suji), a pinch of salt, and 2 tablespoons of ghee. Mix everything together until the mixture looks like breadcrumbs.
- Add water a little at a time and knead the mixture until you have a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
- In a separate mixing bowl, add 1/2 cup chopped prunes, 1/2 cup chopped chocolate, and 1/2 teaspoon of cardamom powder. Mix everything together and set aside.
- After the dough has rested, divide it into small portions and roll each portion into a ball. Using a rolling pin, roll out each ball into a small circle, about 3-4 inches in diameter.
- Place a tablespoon of the prune and chocolate mixture in the center of each circle. Fold the circle in half and pinch the edges together to seal the gujiya.
- Heat oil in a deep frying pan over medium heat. Once the oil is hot, gently slide in a few gujiyas at a time and fry them until they turn golden brown.
