Ingredients

  • 2 cups sesame seeds
  • 1 cup jaggery (grated or powdered)
  • 1/2 cup ghee
  • 1/4 cup water
  • 1/2 teaspoon cardamom powder
  • A pinch of salt
  • Chopped nuts (optional, for garnish)

Instructions:

  • Begin by dry roasting the sesame seeds in a pan over medium heat. Stir continuously to ensure even roasting and to prevent them from burning. Roast until the sesame seeds turn golden brown and release a nutty aroma. This should take around 5-7 minutes. Once roasted, set them aside to cool.
  • In the same pan, add the ghee and let it melt over low heat. Once the ghee has melted, add the jaggery and water to the pan. Stir well to combine the ingredients.
  • Allow the jaggery to melt completely and form a syrup. Keep stirring the mixture occasionally to avoid any lumps. Cook the syrup on medium heat until it reaches a soft ball consistency. To test this, drop a small amount of the syrup into a bowl of cold water. It should form a soft ball that holds its shape when pressed between your fingers. This process should take about 10-12 minutes.
  • Once the syrup reaches the desired consistency, add the roasted sesame seeds, cardamom powder, and a pinch of salt to the pan. Mix everything together thoroughly to coat the sesame seeds evenly with the jaggery syrup.
  • Remove the pan from the heat and transfer the mixture to a greased plate or tray. Use a spatula or the back of a spoon to spread the mixture evenly and smooth the surface.
  • While the mixture is still warm, you can garnish the barfi with chopped nuts if desired. Press the nuts lightly into the surface of the barfi.
