Ingredients
- 2 cups Basmati Rice
- 1 onion, thinly sliced
- 1 carrot, peeled and sliced
- 1 potato, peeled and cubed
- 1/2 cup green peas
- 2 green chilies, slit
- 1/2 inch ginger, grated
- 1 tsp cumin seeds
- 1 bay leaf
- 4-5 cloves
- 1 cinnamon stick
- 2-3 green cardamoms
- 1 black cardamom
- 1 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp ghee
- 4 cups water
Instructions
- Rinse the rice in running water until the water runs clear. Soak the rice in water for 30 minutes.
- Heat ghee in a deep bottomed pan. Add cumin seeds, bay leaf, cloves, cinnamon stick, green cardamom, and black cardamom.
- Once the spices start to splutter, add sliced onions, green chilies, and grated ginger. Fry until the onions turn golden brown.
- Add cubed potatoes, sliced carrots, and green peas to the pan. Fry for a minute.
- Add turmeric powder, red chili powder, and salt to the pan. Mix well.
- Drain the soaked rice and add it to the pan. Fry the rice for 2-3 minutes until it becomes slightly translucent.
- Add 4 cups of water to the pan. Bring it to a boil.
- Once the water starts boiling, lower the heat and cover the pan with a tight-fitting lid.
- Cook the rice on low heat for 15-20 minutes or until all the water is absorbed and the rice is cooked through.
- Once the rice is cooked, turn off the heat and let it sit covered for 5-10 minutes.
- Open the lid and gently fluff the rice with a fork.
- Sprinkle garam masala powder on top of the rice.
