- 1 onion, chopped
- 2 teaspoons ginger paste
- 2 teaspoons garlic paste
- 2 green chilies, chopped
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 2 teaspoons cumin powder
- 1 teaspoon garam masala powder
- 1 teaspoon salt
- 1 cup yogurt
- 1/2 cup chopped mint leaves
- 1/2 cup chopped cilantro leaves
- 1 kg chicken, cut into small pieces
For the Bamboo:
- 2-3 large bamboo stems
- Aluminum foil
Method:
- Soak the basmati rice in water for at least 30 minutes. This will help the rice cook evenly and prevent it from sticking together.
- In a large pot, bring 4 cups of water to a boil. Add the bay leaves, green cardamom pods, cinnamon stick, and salt. Stir well.
- Drain the soaked rice and add it to the boiling water. Stir well and reduce the heat to low. Cover the pot and let the rice cook for 15-20 minutes, or until it is fully cooked.
- While the rice is cooking, prepare the masala. In a large pan, heat the oil over medium heat. Add the chopped onions and fry until they turn golden brown.

- Add another layer of rice on top of the chicken masala, filling the bamboo to the top. Pack the rice down firmly.
- Cover the open end of the bamboo with aluminum foil.
- Place the bamboo sections in a baking dish and bake in the preheated oven for 30-40 minutes.
