Ingredients

  • Rice – 1/2 cup
  • Milk – 1 litre

  • Sugar – 1/2 cup
  • Cardamom (Elaichi) – 4-5 pods, crushed
  • Saffron (Kesar) – a few strands
  • Pistachios – for garnishing

Instructions

  • Wash and soak the rice in water for at least 30 minutes. Drain the water and grind the rice into a fine powder in a mixer or blender.
  • Soak the almonds in hot water for about 15 minutes. Remove the skin and grind the almonds into a fine paste in a mixer or blender. You can also use almond flour instead of grinding the almonds at home.
  • Heat the milk in a heavy-bottomed pan and bring it to a boil. Reduce the heat to low and let it simmer for about 10-15 minutes.
  • Add the ground rice to the milk and mix well. Keep stirring continuously to prevent the rice from sticking to the bottom of the pan.
  • Add the almond paste and mix well. Keep stirring until the mixture thickens and becomes creamy.
  • Add the sugar, crushed cardamom pods, and saffron strands to the mixture and stir well.
  • Cook for another 5-10 minutes until the sugar dissolves and the mixture thickens further.
  • Remove from heat and let the mixture cool down to room temperature.
  • Pour the mixture into small earthen pots or bowls and refrigerate for at least 2-3 hours until it sets.
  • Garnish with chopped pistachios before serving.

Tips

  • Use whole milk for a creamy texture. You can also use a combination of milk and cream for a richer taste.
  • Soak the rice for at least 30 minutes before grinding it into a powder. This will make it easier to blend and give the Phirni a smooth texture.
