Directions

  • Wash the mutton pieces thoroughly and pat them dry with a kitchen towel. 
  • Heat oil in a pressure cooker and add the cumin seeds. Once the seeds crackle, add the chopped onions and green chilies. 
  • Sauté the onions until they turn golden brown. Add the ginger and garlic paste and cook for another minute. 
  • Add the chopped tomatoes and cook until they turn soft and mushy. 
  • Add the coriander powder, turmeric powder, red chili powder, and salt to taste. Mix well and cook for 2-3 minutes. 
  • Add the mutton pieces and mix well so that the masala coats the mutton evenly. 
  • Add enough water to cover the mutton pieces and pressure cook for 3-4 whistles or until the mutton is tender. 
  • Once the pressure has released, open the cooker and add garam masala. Mix well and cook on medium heat for another 10 minutes. 
  • Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.

Tips

  • You can add a tablespoon of yogurt to the gravy to give it a creamy texture. 
  • If you do not have a pressure cooker, you can cook the mutton in a deep pot with a lid. However, it may take longer to cook. 
  • You can adjust the spices according to your taste preferences. If you like it spicy, add more red chili powder. If you like it mild, reduce the amount of chili powder. 
  • You can also add other vegetables like potatoes or carrots to the curry to make it more wholesome. 
  • You can marinate the mutton pieces in yogurt and spices overnight to make it more flavorful.
