Ingredients

  • 2 cups whole wheat flour (atta)
  • 1 cup ghee (clarified butter)
  • 1 cup jaggery (grated or powdered)
  • 1/2 cup chopped almonds and cashews
  • 1/4 cup raisins
  • 1/4 teaspoon cardamom powder
  • A pinch of salt

Instructions:

  • Heat a heavy-bottomed pan on medium heat and add ghee to it. Allow the ghee to melt completely.
  • Add the whole wheat flour to the melted ghee and mix well. Reduce the heat to low and start roasting the flour.
  • Continuously stir the flour in the pan to ensure it is evenly roasted. Roast the flour until it turns golden brown and you start to get a nutty aroma. This process may take around 15-20 minutes, so be patient.
  • Once the flour is roasted, turn off the heat and let it cool for a few minutes.
  • In another pan, heat a little ghee and lightly roast the chopped almonds, cashews, and raisins. Set them aside.
  • Take the cooled roasted flour in a large mixing bowl and add the grated or powdered jaggery to it.
  • Add the roasted nuts, raisins, cardamom powder, and a pinch of salt to the bowl as well. Mix all the ingredients together.
  • Now, using your hands, start combining all the ingredients together to form a dough-like consistency. The ghee in the flour will help bind everything together.
  • Take small portions of the dough in your hands and shape them into small round balls or pinnis. Press them gently to ensure they hold their shape.
  • Repeat the process until you have used all the dough and formed pinnis.
  • Allow the pinnis to cool completely before storing them in an airtight container.
