Ingredients
- 1 cup dried figs (anjeer)
- 1 cup cashews (kaju)
- 1/2 cup powdered sugar
- 1/2 tsp cardamom powder (elaichi powder)
For the outer layer
- 500 gm khoya or mawa
- 1/4 cup powdered sugar
- A few drops of rose water
Method
- Firstly, take 1 cup of dried figs and soak them in warm water for 15-20 minutes. Drain the water and finely chop the figs.
- In a pan, dry roast 1 cup of cashews on low heat until they turn golden brown. Remove the cashews from the pan and let them cool.
- Once the cashews have cooled, grind them in a food processor or mixer grinder until they turn into a fine powder.
- In the same mixer or food processor, add the chopped figs and grind them until they are finely chopped.
- Now, take a pan and add the figs and cashews mixture along with 1/2 cup of powdered sugar. Cook on low heat until the mixture thickens and comes together like a dough.
- Add 1/2 tsp of cardamom powder to the mixture and mix well. Turn off the heat and let the mixture cool.
- In another pan, crumble 500 gm of khoya or mawa and cook it on low heat until it melts and turns into a smooth paste.
- Once the khoya has melted, add 1/4 cup of powdered sugar and a few drops of rose water to it. Mix well and turn off the heat.
- Take a large plate and grease it with ghee or oil. Transfer the khoya mixture to the plate and let it cool slightly.
- Once the khoya has cooled down, knead it for a few minutes until it becomes smooth and pliable.
- Divide the khoya into equal-sized portions and roll each portion into a thin circle.
- Place a spoonful of the fig and cashew mixture in the center of the khoya circle.
- Roll the khoya circle around the filling and press the edges to seal it.
- Repeat the process with the remaining khoya and filling to make more rolls.
- Once all the rolls are made, refrigerate them for 15-20 minutes until they set.
- Once the rolls have set, cut them into small pieces and serve.
