- Guntur chilli paste – 2 tbsp
- Ginger garlic paste – 1 tsp
- Oil – 2 tsp
For tempering:
- Oil – 2 tbsp
- Mustard seeds – 1 tsp
- Curry leaves – a few
- Green chillies – 2, chopped
- Chana dal – 1 tsp
- Urad dal – 1 tsp
Method:
- Soak the rice, urad dal, chana dal and fenugreek seeds in water separately for 6 hours.
- Grind the urad dal, chana dal, and fenugreek seeds together into a smooth batter. Add water as required.
- Grind the rice into a coarse batter. Add water as required.
- Mix the urad dal and rice batter together in a large bowl. Add salt and mix well.
- Cover the bowl and let the batter ferment overnight or for 8-10 hours.
- After fermentation, add baking soda, ginger garlic paste, Guntur chilli paste and 2 tsp of oil to the batter. Mix well.
- Grease the idli plates with oil and pour the batter into them.
- Steam the idlis for 10-12 minutes or until they are cooked.
- Let the idlis cool for a few minutes before removing them from the plates.
- For tempering, heat oil in a pan. Add mustard seeds, curry leaves, green chillies, chana dal and urad dal. Saute until the dal turns golden brown.
- Pour the tempering over the idlis and serve hot with coconut chutney and sambar.
