Ingredients

  • Rice – 2 cups
  • Urad dal – 1 cup
  • Chana dal – 1/4 cup
  • Fenugreek seeds – 1/2 tsp
  • Salt – 1 tsp
  • Water – as required
  • Baking soda – 1/2 tsp
  • Guntur chilli paste – 2 tbsp
  • Ginger garlic paste – 1 tsp
  • Oil – 2 tsp

For tempering:

  • Oil – 2 tbsp
  • Mustard seeds – 1 tsp
  • Curry leaves – a few
  • Green chillies – 2, chopped
  • Chana dal – 1 tsp
  • Urad dal – 1 tsp

Method:

  • Soak the rice, urad dal, chana dal and fenugreek seeds in water separately for 6 hours.
  • Grind the urad dal, chana dal, and fenugreek seeds together into a smooth batter. Add water as required.
  • Grind the rice into a coarse batter. Add water as required.
  • Mix the urad dal and rice batter together in a large bowl. Add salt and mix well.
  • Cover the bowl and let the batter ferment overnight or for 8-10 hours.
  • After fermentation, add baking soda, ginger garlic paste, Guntur chilli paste and 2 tsp of oil to the batter. Mix well.
  • Grease the idli plates with oil and pour the batter into them.
  • Steam the idlis for 10-12 minutes or until they are cooked.
  • Let the idlis cool for a few minutes before removing them from the plates.
  • For tempering, heat oil in a pan. Add mustard seeds, curry leaves, green chillies, chana dal and urad dal. Saute until the dal turns golden brown.
  • Pour the tempering over the idlis and serve hot with coconut chutney and sambar.

  • Use a wet grinder to grind the batter as it will give you a better consistency.
