The kulcha is made using all-purpose flour and stuffed with a mixture of potatoes, onions, and spices. It is then cooked in a tandoor (traditional clay oven) or on a griddle until it becomes golden and crispy. Here’s a detailed recipe for Amritsari Kulcha:

Ingredients

For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon oil
  • 1/2 cup yogurt
  • Water (as needed)

For the stuffing:

  • 2 medium-sized potatoes, boiled and mashed
  • 1 medium-sized onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon chaat masala
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • Salt to taste

For garnishing:

  • Butter or ghee (clarified butter)
  • Fresh coriander leaves, chopped

 

Instructions:

  • In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and oil. Mix well using your fingers until the mixture resembles breadcrumbs.
  • Add yogurt to the flour mixture and start kneading the dough. Gradually add water as needed to make a soft and pliable dough. Knead for about 5-7 minutes until the dough becomes smooth. Cover it with a damp cloth and let it rest for 2 hours to allow it to ferment.
  • Meanwhile, prepare the stuffing by combining mashed potatoes, finely chopped onion, green chilies, ginger-garlic paste, coriander leaves, chaat masala, red chili powder, cumin powder, and salt in a bowl. Mix everything well to form a uniform mixture.
  • After the resting time, divide the dough into small lemon-sized balls. Take one ball and roll it into a small circle using a rolling pin. Place a spoonful of the prepared stuffing in the center of the circle.
  • Gather the edges of the circle and seal the stuffing inside, creating a stuffed ball. Flatten the ball gently with your hands and roll it again into a thick circle of about 4-5 inches in diameter.
  • Preheat a tandoor or a griddle (tawa) on medium heat. Place the rolled kulcha on the hot tandoor or griddle, wet the top surface with water, and flip it over. Cook for about a minute until bubbles start to appear on the surface.
  • Flip the kulcha again and apply some butter or ghee on top. Cook for another minute until the kulcha turns golden brown and crispy. Repeat the process with the remaining dough and stuffing to make more kulchas.
  • Once cooked, remove the kulcha from the tandoor or griddle and apply more butter or ghee on top. Garnish with freshly chopped coriander leaves.
  • Serve the hot and crispy Amritsari Kulchas with spicy chole, yogurt, and pickles. They also taste great on their own or with a side of mint chutney.
