Ingredients
- 2 cups of whole wheat flour
- 3 medium-sized potatoes
- 1 small onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- Salt to taste
- 1 tbsp vegetable oil
- Water as required
Instructions:
- Boil the potatoes in a pressure cooker or boiling water until they are cooked through and soft. Drain the water and let the potatoes cool.
- Once the potatoes are cool enough to handle, peel the skin and mash them using a potato masher or fork. Set aside.
- In a pan, heat 1 tbsp of vegetable oil and add cumin seeds. Let them splutter for a few seconds.
- Add the chopped onions and sauté until they are translucent.
- Add the chopped green chilies, coriander powder, red chili powder, garam masala powder, and salt to the pan. Stir well.
- Add the mashed potatoes to the pan and mix everything well. Cook the potato mixture for a few minutes until it’s dry. Turn off the heat and let it cool.
- In a mixing bowl, add the whole wheat flour and salt. Mix well.
- Add water gradually and knead the dough until it’s soft and pliable. Cover the dough and let it rest for 10-15 minutes.
- Divide the dough into equal portions and roll them into balls.
- Take one ball and flatten it with your palms. Dust it with some flour and roll it into a small disc.
- Place a spoonful of the potato mixture in the center of the disc.
- Bring the edges of the disc together to cover the potato mixture and seal it by pinching the edges together.
- Flatten the stuffed dough ball with your palms and dust it with some flour.
- Roll it into a circular shape with a rolling pin, using flour to prevent sticking.
- Heat a tawa or griddle on medium heat. Place the rolled paratha on the tawa and cook for a few seconds until you see small bubbles forming on the surface.
- Flip the paratha and cook the other side for a few seconds until you see small bubbles forming.
- Brush the top of the paratha with oil or ghee, flip it over, and brush the other side with oil or ghee.
- Cook the paratha until it’s golden brown on both sides.
- Serve hot with chutney, pickle, or yogurt.
