How To make Ada Pradhaman? | Instant Ada Pradhaman Recipe
Ada Pradhaman is a traditional South Indian dessert made with rice flour flakes (ada), coconut milk, jaggery, and spices. It is a popular dessert served during festivals and special occasions in Kerala. The dish is easy to prepare and can be made in about 30-40 minutes.
Here is a step by step guide on how to prepare Ada Pradhaman at home
Ingredients
- Rice flour flakes (ada) – 1 cup
- Coconut milk – 2 cups
- Jaggery – 1 cup (grated)
- Ghee – 2 tablespoons
- Cashew nuts – 10-12
- Raisins – 10-12
- Cardamom powder – 1 teaspoon
- Water – 2 cups
Methods:
- Soak the rice flour flakes (ada) in water for about 30 minutes. After 30 minutes, drain the water and keep the ada aside.
- In a heavy-bottomed pan, heat 2 cups of water and add the soaked ada to it. Cook on medium flame until the ada becomes soft and tender. Stir occasionally to prevent the ada from sticking to the bottom of the pan.
- Once the ada is cooked, drain the water and rinse the ada in cold water. This will help to remove any excess starch and cool the ada.
- In the same pan, add 2 cups of coconut milk and 1 cup of grated jaggery. Cook on medium flame until the jaggery melts completely and the coconut milk thickens. Stir occasionally to prevent the mixture from sticking to the bottom of the pan.
- Once the jaggery and coconut milk mixture thickens, add the cooked ada to it and mix well. Cook for 5-7 minutes on low flame.
- In a separate pan, heat 2 tablespoons of ghee and add cashew nuts and raisins to it. Fry until the cashews turn golden brown and the raisins plump up.
- Add the fried cashews and raisins to the ada pradhaman mixture and mix well. Add 1 teaspoon of cardamom powder and mix again.
- Cook the mixture for another 5-7 minutes on low flame, stirring occasionally.
- Once the ada pradhaman is cooked, turn off the flame and let it cool for a few minutes.
- Serve the ada pradhaman warm or chilled as per your preference.
Tips
- Make sure to soak the ada for at least 30 minutes before cooking it.
- Rinse the cooked ada in cold water to remove any excess starch and to cool it down.
- Use freshly grated coconut to extract coconut milk for the best taste.
- Adjust the amount of jaggery as per your preference.
- Fry the cashews and raisins until they turn golden brown to get a crunchy texture.
- Do not overcook the ada pradhaman as it can become too thick and sticky.
